Triple Dellorto HELP! Newbie to Carbs

Hey all,

75 280 coupe. Sat for 10 years and I've been tasked with getting her going. 

So far:

ripped out fuel tank had it professionally cleaned and sealed - Removed float bowl covers and freed needle valves - replaced fuel filter 

I can get it to start and idle with chokes on full but dies out without chokes, also running at idle without chokes I am DUMPING fuel.

Good spark, plugs are clean, fuel is clean.

I am new to carbs (was a chrysler tech for 5 years all injection based) so any and all information will be helpful!
