3 months is nothing. Disconnect the neg terminal and park it in a dry area. Done. According to the BP fact sheet. Octane is lost over time and fuel will only oxidate if exposed to UV otherwise still maintains its properties for minimum 6 weeks. I've left my cars for 6 months at times and just top up with fresh 98. No problems

I get that gasoline will degrade over time, but then why are some people recommending to top up instead of draining, something about corrosion in tank/fuel lines or it's just a way to maximize the lifespan of gas?
What carbs are you running (earlier Datsun Hitachi SU's / flat top 260Z carbs / genuine British SU's) ? Is the needle appropriate spec ?
To adjust mixture at only one point (eg at idle) you need to fit differently tapered needles. Winding the jet up or down will richen or lean it across the whole rev range.
Rough idle at low revs could be as simple as the cam - what is "lumpy" ? You may no get a perfect idle if cam is too big.
Is the float level correct ?
Tacho going haywire at same time as engine stuttering sounds electrical to me.
